Tuna Ceviche

Bad Brad’s quick and easy tuna ceviche appetizer. It will wow your guests!!!

4 cups – Chopped raw tuna
1 cup – Chopped onions
2 cups – Chopped tomatoes
¼ cup – Chopped cilantro
¼ cup – Lime and Lemon Juice (1/4 c each)
I package -Flour tortillas

Put all the above chopped ingredients in a bowl and add Lime and Lemon juice to taste. The lime juice will cook your tuna. Add some of your favorite hot sauce to taste, let sit for 6 hours in refrigerator.

Prepare your chips – Cut your tortillas into 6 wedges. Deep fry in hot oil. Lay on paper towels and salt to taste. Serve with your Tuna Ceviche

Tuna Nuggets (Teriyaki Tuna)

Brad Nezat prepares Roasted Garlic Teriyaki Tuna. This can be served as an appetizer or a main course.

2 to 3 lbs Tuna chopped into Nuggets
1 Bottle of roasted Garlic Teriyaki sauce
To taste Cajun Seasoning
To taste Wasabi sesame seeds
1 Carrot shaved

Pour bottled teriyaki sauce into a skillet. Cook sauce until becomes syrupy. Sear Tuna in the teriyaki sauce and add Cajun seasoning to taste. Sprinkle wasabi sesame seeds and carrot shavings on top.

Yellowfin Tuna Grilled

prepared by Steve Rodger< This is my favorite way to cook up some Yellowfin Tuna on the Grill. Easy and simple. Ingredients:
6 – Tuna Steaks
¼ cup – Olive Oil
Salt and Pepper to taste

Cut tuna steaks 1 ½ “ to 2” thick.
(Make sure you are using a clean area with cutting up your tuna into steaks. Cutting your steaks in the same area you cut the tuna up can cause the tuna to taste fishy.)
Add Olive Oil to the tuna steaks, salt and pepper both sides.
On a hot grill, grill quickly on both sides leaving fish pink in the middle.
My favorite side with Tuna Steaks are black beans and rice with some mango salsa on the side.
It doesn’t get much better than this!!

Zesty Italian Yellowfin Tuna

Yellowfin tuna grilled is a favorite for everyone. This recipe is a simple and easy way to enjoy the days catch.

6 – Tuna Steaks
1 cup – Bottled Zesty Italian Dressing
½ cup – Bottled Teriyaki
1 – Zip lock Bag

Cut tuna steaks 1“ to 1 ¼ ” thick. Combine your cup of zesty Italian dressing and ¼ of teriyaki in a zip lock bag. Add approximately 6 steaks and seal the zip lock bag. Shake it up and marinate for 20 minutes. Get your grill nice and hot. Throw steaks on the grill and pour marinade mixture on them as well. Flip them and cook for total of 5 minutes. Zesty Italian Tuna Steaks are ready to eat!
