Triple Tail Ceviche

This is an extremely simple, yet delicious way to prepare your fresh Triple Tail. 

Ingredients

  • 2 lbs of firm, fresh Triple Tail fillets cut into 1/2 inch pieces
  • 1/2 cup of fresh squeezed lime juice
  • 1/2 cup of fresh squeezed lemon juice
  • 1/2 red onion, finely diced
  • 1 cup of chopped tomatoes
  • 1 serrano chili, seeded and finely minced
  • 2 teaspoons of salt
  • Pinch of ground oregano
  • A couple drops of your favorite hot sauce or a pinch of cayenne pepper
  • Cilantro and avocado to garnish
  • Tortilla chips

Preparation

Place the fish, onions, tomatoes, chili, salt, Tabasco, and oregano in a ceramic or glass casserole dish. Cover with lime and lemon juice and let it sit covered in a refrigerator for a few hours, stirring every hour or so to ensure the fish gets exposed to the acidic lime and lemon juices. Then enjoy with your favorite beverage and a bowl of Tortilla chips.
