Once this is all done, you can add your street corn sauce, and build your tacos with your preferred toppings.

When you buy your Simrad unit, it's going to come pre-loaded with the entire navigation of the United States - east and west coast including Great Lakes - but it's kind of basic. If you want to enhance that map you can use C-Map and C-Map reveal. I highly recommend you get this chip once your Simrad is installed.
S12:E9 - “Hawks Cay Wrecks” (2020)
Capt Scott Walker and Capt Steve Rodger explore the fertile waters around Hawk's Cay
Back in the day when we started using the radars to navigate inlets and find fish. We had to get to the boat early to turn the radar on and then wait. Yeah, and then once it warmed up, then you had to actually pick a target in the marina and set the gain on it set to sea state for the day and then going off that one marker you knew that you were dialed in for the day and you do every day.

Our edge on the water is the fact we find the birds first. The radar gets us in the right area, binoculars put us in the right spot. Everyone on board will have a set of the Nikon 7 by 50 Global Compass binoculars with a built-in Compass.

The scales first mate board shorts are another tool in my arsenal with four-way stretch and a padded shammy waistband. I know that when I'm hooked up, I have an easy spot to rest my rod-butt. I'm not going to hurt and I'm not gonna have to reach for a rod belt.

Capt Scott Walker and Capt Steve Rodger adventure to the Marquesas for some exciting Shark action.
The technology today is just as fast as it can go, right? Lighter, faster, stronger… Well, Shimano has figured that out. They've identified two major problems with the old technology and fishing rods. One of them is Twist, right? So you make a cast you don't realize it, but the blank is twisting. Every rod you got in your closet is twisting, you can tell me it doesn't, but it does and it affects your accuracy and your distance. Well, Shimano has identified that problem and fixed it.

Capt Scott Walker and Capt Steve Rodger get on a productive mutton spot near Key West.
So YETI had come out with a Hopper a few years back. It was a very popular item of a soft cooler. It didn't leak, it was great for everything whether you were just fishing, ballparks, kids picnicking, really just a cool item. Well, honestly the zipper was a little bit tough, but like YETI does they are always raising the bar.
S12:E3 - “Key West - Box Full Of Silver” (2020)
Capt Scott Walker and Capt Steve Rodger head West & fish for Kingfish.
There's a lot of fishing lines out there today, there are all types, all colors, all sizes. Well, we've been with Power Pro for a really long time. We've been with them since the beginning, amazing product, the best there is. Well, they've even gone a step further. Power Pro now has Maxcuatro. What that is it's a line that is 25 percent thinner diameter.
This episode picks up where the last one left off, following the duo as they zero in on their target species: permit. It’s a challenging, yet rewarding day for both captains as they utilize the technology at their disposal to work around some of the less-than-favorable conditions and bring in a good permit catch. Read more on Waypoint HERE.
S12:E2 - “Gulf Wreck Permit Part 2” (2020)
Capts Scott Walker & Steve Rodger continue their search for Permit on wrecks in the Gulf of Mexico.
We're down to Key West we're going to go fishing this week. And Steve is going to put me on some of his favorite wrecks. And when we're on the wrecks (back in the day) we would mark them with a big meatball on top of it and we wouldn't know what we're looking at. We would figure it was bait and we'd be happy knowing that something was there.
Live crab is an excellent bait for permit-fishing, according to Walker and Rodger, but it’s usefulness extends beyond just this fish, as Walker discovers over their first wreck… Read more HERE.

The 4th Of July is a great time to have a hearty meal with friends and family and enjoy a firework show. One of my favorite things to do is cook steak on the 4th of July. Below is a recipe for Reverse Sear Steak and it has been shown by my friends and family to be a favorite meal!
This is a super easy party dish and works phenomenally with my Big Green Egg grill, your 4th of July party guests will love these so be sure to make a lot of them! The Lemon Pepper Smoked Wings can be made by taking 24 fresh wings and cut them into 2 pieces. To season, cover the wings in lemon pepper and smoke the wings at 250 degrees for 2 hours. Then coat the wings in BBQ sauce and turn up heat to 375 until the BBQ sauce caramelizes.
The Mercury Active Trim is a GPS, speed based, automatic engine trim system. This responds to the weather around you responding to the weather conditions around you and fuel economy. Now the engine will set the trim for you so you no longer have to. I know many guys who don’t even use their trim because they don’t want to deal with it. The trim is super important for leveling the boat off and saving on fuel - that is why this invention is so awesome.
The newest edition to the Scales gear family is the Fisherman Board Shorts, made my fisherman for fisherman. One of my favorite features is the padded waste band - when we are fishing all day long with spinning tackle, fighting the fish is just the beginning. Then you have to fight the pain of when it hits you in the hip. Scales built protection right in for that exact situation. There is also a built in plier pocket with polyester so the pliers don’t get jammed up - aside from that they are extremely comfortable. Check them out!

With parties during the holidays, the best appetizer you can do is a smoked fish dip. We love this Smoked Kingfish dip. We will cut it up into large chunks about the size of your hand so that they cook evenly and you smoke them skin down. Personally I like to marinate mine with lots of spice, pepper and teriyaki and brown sugar.
I like to take an average like 20 pound tuna and cut the loin into thirds. Then you have to get all the red meat off of it, which you do anyway to eat it. I like to get them about 4 inches long and about 2 stacks of that will fill a jar. I like them to be about a celery stalk.
As Thanksgiving quickly approaches so do the first few cold fronts of the year. With these cold fronts comes a migration of mullet, ballyhoo and pilchards that stirs up the pelagic species like Wahoo, Sailfish and Kingfish. The timing couldn’t be better because a few Kingfish in the Yeti can make for a Thanksgiving side dish or appetizer that your guests will love.
Here is my favorite recipe for smoked Kingfish spread and the one I will use for the big meal but also for several football games. I know it is good because there have never been any leftovers.
Whether you’re out tournament fishing/charter fishing/ or just out boating, you have to have a reliable engine. Mercury Marine is the most innovative in reliability and corrosion resistance. They come with a 3 year factory warranty in corrosion resistance. They have 2x as much stainless steel as any other competitors.
“I’m just rigging up a squid, a little heavier duty than I need to. I am attaching the body and the head to the hook so that if he slashes it - he can’t just tear it in half without having to come back with something all in a knot. It can hit this really good and it will still hold together. It is a little bit more than you need to do, but these baits are soft and they are so far down I like to have a second chance…
As a meal, swordfish are the perfect combination between fish and a meaty steak. Unlike some fish, swordfish is the ideal in-between flavor of fishy and non-fishy taste, making it a perfect selection for those beginning to expand their palette with fish and seafood. What makes swordfish unique is that it is sold by steaks and carries a meaty-like texture to it, rather than a flaky consistency such as tilapia or grouper. Swordfish are cooked exactly like steaks, so they are grilled to your preferred temperature.
We cut a lot of fish. Some for eating and some for bait. In the picture at the top we are cutting a bonito into chunks by cutting in a checkerboard pattern then cutting all of those off the carcass. We will use these chunks for chumming and for baiting our hooks for a host of different species and applications.
Each fish has a way that it is best filleted or cleaned for eating. One thing that is in common with each of these is that you will need a very sharp fillet knife. As you get more involved, you can move from one knife to several which are slightly more specialized for each task. Here are some examples:
Each of the fish we fish for have ways that they can be held safely. There are very few fish that we catch that do not have dangerous parts. Teeth, sharp fins, bills or gill rakers can all cause damage to your hands while other fish just react wildly to being held.
As a Captain or an avid fisherman, it is important to know how to handle each fish to get it in the Yeti or to release it safely and unharmed.
There are some key features that I wanted on my boat:
I wanted twin Mercury Verado motors. A lot of people are used to having 3 motors on a 36 due to having to cover a lot of millage for offshore fishing. There is plenty of power and strength with 2 motors, and in the Keys I don’t have to run as far to get to the fish. This is why I chose to go with 2 350 Verados rather than 3.
This boat is built with 3 live wells, we have a back transom well that is very easy to open the latch to grab a few baits where you don’t have to lean over to get them out. The other well is a floor well. The reason we like this is because when we throw the net we can easily transfer the bait into the floor well. Lastly we have the leaning-post-well which we use mostly as a drink cooler but it can be filled easily.
I updated with all the new Simrad NSS Ev 3. I couldn’t be happier with all of the Simrad functions and abilities it has to put us on the fish. This technology is by far the best Simrad product to date…
We have been a big fan of the SeaDek material for quite some time. We used it on the cooler tops at first and was very impressed with the durability, grip when standing on it and the ease at which it would clean up. Next we installed it on the gunnels of our 36.

When running charters day after day we are all looking for ways to reduce our clean up time at the end of every day. Our clients do not always have ‘boat friendly’ shoes...
For fishing offshore on reefs, use light ocean tackle with live pinfish, ballyhoo chunks, or live pilchards. When targeting these fish on shallow grassy flats, light inshore spinning tackle should be used with small jigs, plugs or live crustaceans, such as live shrimp or crabs.
Place 24x18-inch piece of foil on a heavy large baking sheet. Spread butter on foil to prevent sticking. Preheat oven to 350.

I have been fishing children for years and it is very important that you focus on teaching them, and keeping them involved in the day. It is not all about catching the biggest fish; it is about ‘hooking’ them on the experience and all that there is to see out on the water. Here are some tips to make your trip great:
Taking care of your catch:
Take only what you can properly handle, store and eat. Here are some tips for keeping your catch cool and fresh:

Perfect chowder for cold winter days, when the weather is rough, and you're stuck inside not fishing. Often times, the highest quality of meat in a fish is discarded after it is filleted. In groupers, the head bares the fattiest and richest meat in the entire fish, and when boiled down, makes an incredible broth base for fish chowder.

Remove skin and bone from the smoked fish. Flake with a fork in a large mixing bowl. Stir in all wet ingredients and then add in all remaining. Once thoroughly mixed, Chill at least one hour before serving. Great served with crackers and hot sauce of your choice.
One of our favorite methods for targeting sailfish is kite fishing with live bait. Kite fishing is equal parts skill, and art form.
